Frequently I see players send ships literally flying around someone's possession, in order to attack another of his possessions (perhaps a more valuable one, or just one that's hoped to be less defended).

This is rarely a good idea.  If your opponent has something on the bypassed planet that you don't want to fight, he'll always have the option of sending it along with your fleet to wherever your fleet's headed (sometimes there are non-zero-sum wars where it's good to increase your opponent's option set--but this is rare).  If he doesn't have something that you don't want to fight, then you can snatch the planet you're bypassing, and then send the fleet onward to its destination, losing essentially no time (a second or two only really matter if you're fleeing hot pursuit or if your ultimate destination is a mega planet), while increasing your income.

The main reason to bypass a planet is to wage a war of attention:
- You might hope that your opponent isn't paying attention, or is a beginner, and so will fail to send the ships back if doing so is indicated; i.e. you're hoping he'll make a mistake with the extra options you're giving him.
- You might hope to draw your opponent's attention to the area, so that he'll make a mistake elsewhere.
- You yourself might not have enough attention to spare to micromanage a better attack (perhaps you're a large power fighting multiple gnats, or perhaps there's simply a more important battle on another front), and so have sent your fleet at the point where it can do the most damage simply by sitting still.

If none of these conditions hold, then it's almost certainly better for your fleet to hit everything in its path on the way to its destination.
